Don Papa Sherry Cask is a premium Philippine rum that stands out for its unique aging process. It is first aged for several years in ex-bourbon American oak casks on the slopes of Mount Kanlaon, on the island of Negros. The rum is then transferred to sherry casks (Palo Cortado, Fino, Cream and Pedro Ximenez) for a further 18 months. This double aging gives Don Papa Sherry Cask a rich and complex flavor profile, with notes of dried fruits, dark chocolate, figs, plums and a touch of sweet spices. The result is a full-bodied, smooth and perfectly balanced rum, ideal to be enjoyed neat or on the rocks.
